A moist, classic banana bread you can make in one bowl. No mixer needed. Great with walnuts or chocolate chips. Tips: don’t overmix; use very ripe bananas; let it cool before slicing.

  • 3 bananasMashed = 1 and a half cups
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup flour

  1. Preheat oven to 350°F (175°C). Grease a 9×5‑inch loaf pan or line with parchment.

  2. In a bowl, whisk mashed bananas with melted butter and sugar until combined

  3. Whisk in egg and vanilla. Sprinkle baking soda and salt over the top; whisk to combine

  4. Add flour and gently fold just until no dry streaks remain. Fold in walnuts or chips if using. Don’t overmix

  5. Pour into pan, smooth the top, and bake until a tester comes out clean

  6. Cool in pan 10 minutes, then lift out and cool fully before slicing.
